1 c. lentils
1 T. olive oil
1 medium onion
1 stalk celery
1 carrot
1 large potato
5 c. water
1 bay leaf
1/4 t. salt
2 - 3 T. soy sauce
- Peel the carrot. If large, then cut into half or quarters and slice thinly
- Peel the potato and cut into 1/2" cubes
- Cut the onion in half and slice thinly
- If the celery stalk is wide then cut in half, then slice celery thinly
- Add the oil to a 4 qt. saucepan and heat over medium flame
- Add the onion to the hot oil and stir. Cook until golden brown on the edges
- Add celery, stir and cook for one minute
- Add carrot, stir and cook for one minute
- Add lentils, potato, water, bay leaf and salt
- Bring to boil for several minutes
- Cover, Reduce heat and simmer for 30 minutes or until lentils are tender
- Add soy sauce, heat thoroughly and serve
Serves 3 - 4
