1 c. lentils
1 T. olive oil
1 medium onion
1 stalk celery
1 carrot
1 large potato
5 c. water
1 bay leaf
1/4 t. salt
2 - 3 T. soy sauce

  1. Peel the carrot. If large, then cut into half or quarters and slice thinly
  2. Peel the potato and cut into 1/2" cubes
  3. Cut the onion in half and slice thinly
  4. If the celery stalk is wide then cut in half, then slice celery thinly
  5. Add the oil to a 4 qt. saucepan and heat over medium flame
  6. Add the onion to the hot oil and stir. Cook until golden brown on the edges
  7. Add celery, stir and cook for one minute
  8. Add carrot, stir and cook for one minute
  9. Add lentils, potato, water, bay leaf and salt
  10. Bring to boil for several minutes
  11. Cover, Reduce heat and simmer for 30 minutes or until lentils are tender
  12. Add soy sauce, heat thoroughly and serve

Serves 3 - 4
