1/2 c. butter
1/2 c. sugar
2 bananas, overripe
2 large eggs
4 T. sour cream or plain low fat yogurt
1 3/4 c. flour
1 t. baking soda
1 t. vanilla extract

1. Preheat oven to 350° F.
2. Cream butter and sugar
3. Add bananas and mix well
4. Add eggs, then add sour cream and mix well
5. Add vanilla extract
6. Mix together dry ingredients and add to banana mixture
7. Bake for 55 - 60 minutes until cake tester inserted in center comes out clean
8. Let cool and remove from pan

Pan size: one large loaf pan, one 9x9 inch square pan, or one 10x7x2 inch rectangle

One and one half times recipe makes two small loaves or one ring springform pan

Note: Glaze can be made of lemon juice mixed with confectioners' sugar. Poke holes in cake with a toothpick and pour glaze over cake while it is still in pan. Allow to cool thoroughly before removing from pan.
