1/2 c. butter
1/2 c. sugar
2 bananas, overripe
2 large eggs
4 T. sour cream or plain low fat yogurt
1 3/4 c. flour
1 t. baking soda
1 t. vanilla extract
- Preheat oven to 350° F.
- Cream butter and sugar
- Add bananas and mix well
- Add eggs, then add sour cream and mix well
- Add vanilla extract
- Mix together dry ingredients and add to banana mixture
- Bake for 55 - 60 minutes until cake tester inserted in center comes out clean
- Let cool and remove from pan
Pan size: one large loaf pan, one 9x9 inch square pan, or one 10x7x2 inch rectangle
One and one half times recipe makes two small loaves or one ring springform pan
Note: Glaze can be made of lemon juice mixed with confectioners' sugar. Poke holes in cake with a toothpick and pour glaze over cake while it is still in pan. Allow to cool thoroughly before removing from pan.
