1 1/4 c. flour
1 t. baking soda
1/2 t. ground cinnamon
1 c. butter, softened
3/4 c. sugar
3/4 c. light brown sugar, packed
2 large eggs
1 t. vanilla extract
3 c. old fashioned oats
1 c. butterscotch chips (this is half the standard package)

  1. Preheat oven to 375° F.
  2. Mix together butter and sugars until fluffy
  3. Add eggs and beat well
  4. Add vanilla extract
  5. Mix together dry ingredients
  6. Gradually add dry ingredients to butter egg mixture
  7. Mix in the oatmeal
  8. Stir in the butterscotch chips
  9. Grease a standard jelly roll pan, 10"x15"
  10. Spread batter into pan, using a spatula to be sure that dough spreads into the corners
  11. Bake for 15-18 minutes or until just baked when tested with a cake tester
