2 1/4 c. milk
1 c. oats (I prefer Quaker regular oatmeal)
4 T. vegetable oil
3 eggs
1 1/2 c. unbleached white flour
1/2 c. whole wheat flour
2 T. regular sugar
1 T. light brown sugar
1 T. 1/2 t. baking powder
1 t. cinnamon
1 apple grated, but not peeled
butter
- Beat eggs and oil
- Add milk and mix well
- Add oatmeal and mix well
- Mix together dry ingredients and add to egg - milk mixture. It may be a little lumpy but don't worry
- Add grated apple and mix, but don't over stir
- Melt butter in fry pan over medium heat
- Spoon into buttered fry pan
- Turn over when bubbles that form on the surface have begun to pop
- Cook on the second side until brown. This will take less time than the first side.
