2 c. flour
1/2 t. salt
1/8 t. cayenne pepper
1/4 t. paprika
1 T. + 1 t. baking powder
3/4 t. cream of tartar
1/2 c. cheddar cheese
8 T. butter cut in small pieces
2/3 c. + 2 T. milk
- Mix together dry ingredients
- Add grated cheese
- Cut in butter using two knives or food processor. Be sure not to over process. It should have the consistency of coarse corn meal
- Add milk and stir quickly to form dough
- Dip hands in flour, flour surface and rolling pin
- Roll out 1/2 inch thick and cut into shapes using a knife, cookie cutter or a glass
- Take remains and roll out again or press flat with hands. Do not handle too much or the biscuits will be tough
- Bake 15 - 18 minutes at 425° F.
