2 c. flour
2 T. sugar
1/2 T. baking powder
1/4 t. baking soda
2 eggs, separated
1 c. plain, low fat yogurt
1 c. low fat or 2 percent milk
6 T. butter, melted
- Mix together dry ingredients
- Beat together egg yolks, yogurt and milk together
- Beat egg whites until stiff but not dry. Peaks should not fall much if at all
- Add dry ingredients to milk mixture being careful not to overmix
- Add melted butter being careful not to overmix
- Fold in egg whites
- Spoon batter into preheated waffle iron and follow directions for making waffles
Makes about 7 waffles
