2 c. flour
2 T. sugar
1/2 T. baking powder
1/4 t. baking soda
2 eggs, separated
1 c. plain, low fat yogurt
1 c. low fat or 2 percent milk
6 T. butter, melted

  1. Mix together dry ingredients
  2. Beat together egg yolks, yogurt and milk together
  3. Beat egg whites until stiff but not dry. Peaks should not fall much if at all
  4. Add dry ingredients to milk mixture being careful not to overmix
  5. Add melted butter being careful not to overmix
  6. Fold in egg whites
  7. Spoon batter into preheated waffle iron and follow directions for making waffles

Makes about 7 waffles
