6 T. sugar
3 c. heavy cream
6 egg yolks
2 t. vanilla extract
1/2 c. light brown sugar
- Preheat oven to 300° F.
- Heat cream over boiling water and stir in sugar
- Beat the egg yolks until light colored
- Heat heavy cream and slowly pour the cream over the eggs, stirring vigorously
- Stir in vanilla extract
- Strain mixture into 1 quart baking dish
- Place dish in a pan containing 1" hot water
- Bake in the oven for 35 minutes or until a silver knife inserted in the center comes out clean
- Do not overcook; the custard continues to cook from retained heat when removed from the oven
- Chill
- Preheat the oven broiler
- On a piece of waxed paper, draw a circle the size of the baking dish
- Press the brown sugar into a even layer within the bounds of the circle
- Carefully slide the brown sugar on top of the custard
- Set the baking dish on a bed of cracked ice
- Place baking dish surrounded by ice under the broiler until sugar is browned and melted
- Serve immediately or chill and serve cold
