3 medium zucchini, sliced about 1/3" wide
1 medium onion, diced
1 large or 2 medium tomatoes, diced
2 1/2 T. oil + 1 1/2 T. butter
1/8 t. black mustard seeds
1/4 t. urad dal
2 dried red peppers
1/4 t. turmeric
1/2 t. cayenne pepper
1/2 t. ground coriander

salt to taste
1 t. lemon juice
pinch of ground cinnamon
pinch of ground cloves

  1. Heat butter and oil in a 12" fry pan with cover
  2. Add mustard and urad dal. Heat until crackling
  3. Break red peppers into pieces, remove the seeds to make the curry less hot
  4. Add the onion and cook until golden brown, stir occasionally
  5. Add zucchini, tomatoes, turmeric, cayenne pepper and coriander
  6. Add 1/4 c. water and cook for 20 - 25 minutes.
  7. Season with salt, cinnamon, cloves and lemon juice
