1/4 c. butter
1 clove garlic, minced
2 T. onion, chopped
1 T. tomato paste
2 T. flour
1 1/2 c. water
2 T. sherry
2 T. slivered almonds or pine nuts
1 t. dried tarragon
3/4 c. sour cream
1 T. Parmesan cheese
1 small head of cauliflower cut into bite sized pieces

  1. Saute garlic and onion over low heat for 3 minutes
  2. Add tomato paste and flour. Stir with whisk until smooth
  3. Add water and sherry. Bring to boil
  4. Add almonds, salt, pepper and tarragon. Stir
  5. Add cauliflower pieces. Cover and simmer slowly over low heat about 10 - 15 minutes until cauliflower is soft
  6. Transfer cauliflower to bake and serve dish
  7. Stir sour cream into remaining sauce. Heat thoroughly but do NOT boil
  8. Pour sauce over cauliflower, sprinkle with cheese and brown under broiler
