2 c. flour
1 pound cheddar cheese, coarsely grated, extra sharp
3/4 c. unsalted butter
1 t. salt
2 T. heavy cream

assorted garnishes including celery seeds, poppy seeds, pecan halves
parchment paper

  1. Preheat oven to 350° F.
  2. Combine flour, cheese, butter and salt in food processor. Blend until cheese is finely chopped
  3. Add cream; blend until moist clumps form
  4. Roll into balls using one level Tablespoon of dough for each ball
  5. Place on baking sheets covered with parchment paper. Space one inch apart
  6. Sprinkle balls with celery seeds, poppy seeds or sesame seeds, or press a pecan half into each ball
  7. Bake until cooked through, about 22 minutes. Reverse cookie sheets half way through. Bottoms should be golden brown
  8. Cool completely on sheets and remove

May be stored in an airtight container.
