4 medium onions, chopped fine
4 T. oil, divided
2 - 3 T. paprika
1 1/4 pound mushrooms, sliced
3/4 - 1 c. vegetable stock
1/3 - 1/2 c. sherry
2 c. low fat cottage cheese
1/2 c. sour cream
8 oz. noodles

  1. Sauté onions in 3 T. oil until soft
  2. Stir in paprika and cook one minute
  3. In separate pan, sauté mushrooms in 1 T. oil
  4. Add mushrooms to onions and paprika
  5. Add sherry and stock to onion - mushroom mixture. Cook 5 minutes. Add extra stock if mixture seems dry
  6. Put cottage cheese and sour cream in food processor and blend until smooth
  7. Stir cheese mixture into fry pan being careful that it does not overheat as boiling will curdle the cheese
  8. Serve over noodles that have been cooked and drained
