1 medium onion, cut in half and sliced paper thin
2 T. butter or olive oil
2 c. rice
4 c. water
1 t. dried oregano
1/2 t. cumin
1/2 T. salt
1/4 t. pepper
1 c. dried fruit, chopped (raisins, currents, apricots)
1 c. mixed nuts and seeds, toasted (sesame seeds, sunflower seeds, pine nuts, almonds, cashew nuts)

  1. Melt butter in large saucepan
  2. Add the onions and sauté until soft and transparent
  3. Add the rice and stir until all grains are covered with butter and rice starts to crackle
  4. Add seasonings and stir well
  5. Add water and bring to a boil
  6. Cover, turn heat very low and simmer for 10 minutes
  7. Add dried fruit, stir well, cover and cook an additional 10 - 15 minutes until all water is absorbed
  8. Pour nuts and seeds over the top to serve

Serves 4 - 6 or more depending upon what else is served
