1 T. olive oil
1 - 1 1/2 T. butter
1 clove garlic, crushed
1 small onion, minced
8 oz. button mushrooms
1/4 t. cardamon
1/8 t. cayenne pepper
1/8 t. coriander powder
2 c. long grained white rice
4 c. water
1 can dark red beans, drained and rinsed
salt
freshly ground pepper

  1. Heat the oil and the butter in 4 qt saucepan
  2. Add the crushed garlic and the onion and sauté until slightly browned
  3. Slice the mushrooms and add to saucepan
  4. Cover and cook 3 - 5 minutes until mushrooms are cooked
  5. Stir in seasonings
  6. Add the rice and stir until well coated with oil and seasonings
  7. Add the water and bring to a boil
  8. Cover and turn heat to very low
  9. Simmer about 15 minutes
  10. Add the beans and stir. There should still be liquid in the rice
  11. Cover and cook another 5 minutes
  12. Taste and adjust seasonings

Serves 6 - 8 or more depending upon what else is served

My kids enjoy this with sautéed plantains. Slice the plantain and sauté in butter with a little lemon or lime juice. Firm bananas could be substituted
