1 onion, large, peeled
5 garlic cloves, peeled
1 dried chili, or 1 t. red chili pepper flakes
salt and pepper to taste
2 T. vegetable oil
1 T. curry powder or to taste
1 c. chopped tomatoes (canned are fine), optional
1 1/2 pounds winter squash, peeled (firm like butternut or pumpkin), cut into 1" cubes

Lime wedges

  1. Combine onion, garlic and chili in a food processor and grind until pasty
  2. In a large fry pan with lid, add the oil and heat over medium temperature
  3. Add the onion - garlic mixture, salt, pepper and curry powder
  4. Cook, stirring occasionally until onion is brown, about 5-10 minutes
  5. Add the tomatoes, 1/2c. water and squash
  6. Cover and simmer over low heat
  7. Stir occasionally, add more water as necessary, until squash is tender, about 20 minutes
  8. Serve with lime wedges

Serves 4 - 6 as a main course
